Prepare the Filling

In a large skillet, melt the butter over medium heat. Add the onion, celery, and carrots, and sauté until they are soft, about 5-7 minutes.

Add Garlic and Flour

Stir in the minced garlic and cook for an additional minute. Sprinkle the flour over the vegetables and stir to combine, cooking for another 2 minutes.

Create Sauce

Gradually pour in the seafood stock while stirring continuously to avoid lumps. Bring the mixture to a gentle simmer and let it thicken for about 5 minutes.

Add Cream and Seafood

Stir in the heavy cream and mixed seafood. Cook for another 5-7 minutes, until the seafood is cooked through. Add peas, dill, salt, and black pepper, and mix well.

Preheat Oven

Preheat the oven to 400°F (200°C).

Assemble the Pot Pie

Pour the seafood filling into a pie dish. Roll out the pie crust and place it over the filling, sealing the edges. Make a few slits in the top crust to allow steam to escape.

Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown. Let it cool for a few minutes before serving.
