    Sear the Chicken

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the pot. Sear the chicken on both sides until golden brown, about 5-7 minutes per side. Remove the chicken and set aside.

    In the same pot, add the chopped onion, garlic, and bell pepper. Sauté until the vegetables are soft, about 5 minutes.

    Stir in the tomato sauce, chicken broth, carrots, potatoes, cumin, oregano, and bay leaves. Mix well.

    Return the seared chicken to the pot, making sure it is submerged in the sauce. Bring to a boil, then reduce heat to low. Cover and simmer for about 30-40 minutes, or until the chicken is cooked through and tender.
