Marinate the Pork
In a large bowl, combine the minced garlic, olive oil, oregano, cumin, salt, black pepper, lime juice, and bay leaves. Mix well to form a marinade. Rub this mixture all over the pork shoulder, ensuring it gets into all the crevices. Cover and refrigerate for at least 12 hours, preferably overnight.
Preheat the Oven
Preheat your oven to 350°F (175°C).
Cook the Pernil
Remove the pork from the refrigerator and let it sit at room temperature for about 30 minutes. Place the pork in a roasting pan, skin side up. Roast in the preheated oven for about 4 to 5 hours, or until the internal temperature reaches 190°F (88°C) and the skin is crispy and golden brown.
Rest and Serve
Once cooked, remove the pernil from the oven and let it rest for at least 20 minutes before slicing. Serve with your favorite sides.
