Roasting the Turkey
Preheat your oven to 325°F (165°C). Rub the turkey with olive oil, salt, pepper, and herbs. Place it in a roasting pan and roast for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (75°C). Allow it to rest for at least 30 minutes before pulling the meat apart.

Preparing the Sandwich
While the turkey is resting, slice the tomato and onion. Take two slices of bread, spread one tablespoon of mayonnaise on each slice. Layer with lettuce, pulled turkey, provolone cheese, tomato, and onion. Top with another slice of bread.
