    Prepare the Ingredients

    Slice the ribeye steak, onion, and mushrooms. If using, slice the hot or sweet peppers.

    Cook the Onions and Mushrooms

    In a large skillet, heat 1 tablespoon of oil over medium heat. Add the sliced onions and mushrooms, sautéing until they are softened and slightly caramelized, about 5–7 minutes. Remove and set aside.

    Cook the Steak

    In the same skillet, add the remaining tablespoon of oil. Increase the heat to medium-high. Add the sliced ribeye steak, seasoned with salt and black pepper. Cook for 3–5 minutes, stirring frequently until the steak is browned and cooked to desired doneness.

    Combine Ingredients

    Return the cooked onions and mushrooms to the skillet with the steak. Stir to combine and heat through for another minute.

    Melt the Cheese

    Turn off the heat and place the slices of white American cheese over the steak mixture. Cover the skillet with a lid for about 1–2 minutes until the cheese is melted.

    Assemble the Cheesesteak

    Split the hoagie rolls open and fill each with the steak and cheese mixture. Top with hot or sweet peppers if desired. Serve immediately.
