Prepare the Beef
Preheat your oven to 250°F (120°C). Season the American Wagyu beef roast generously with salt and black pepper. Drizzle with olive oil and rub the seasonings into the meat.

Slow Roast
Place the seasoned roast on a rack in a roasting pan. Insert a meat thermometer into the thickest part of the roast. Roast in the preheated oven until the internal temperature reaches 130°F (54°C) for medium-rare, about 2 to 3 hours.

Rest the Meat
Remove the roast from the oven and tent it with aluminum foil. Let it rest for at least 30 minutes before slicing. This allows the juices to redistribute.

Prepare the Toppings
While the roast is resting, slice the tomato and onion. Wash and dry the lettuce leaves.

Assemble the Sandwich
Slice the roast thinly against the grain. On a serving platter or individual sandwiches, layer the sliced roast beef, provolone cheese, lettuce, tomato slices, onion slices, and a generous dollop of mayonnaise.
