    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add chopped bell pepper and sauté until softened, about 3-4 minutes. Stir in black beans, corn, ground cumin, salt, and black pepper. Cook for another 2-3 minutes, then remove from heat.

    Assemble the Enchiladas

    Preheat the oven to 375°F (190°C). Spread 1 cup of enchilada sauce on the bottom of a baking dish. Take a corn tortilla, fill it with a portion of the filling and a sprinkle of cheese. Roll it up and place it seam-side down in the baking dish. Repeat with the remaining tortillas.

    Add Sauce and Cheese

    Pour the remaining enchilada sauce over the rolled tortillas. Sprinkle the remaining cheese on top.

    Bake

    Cover with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Serve

    Let cool for a few minutes, then serve hot with your favorite toppings such as sour cream, guacamole, or fresh cilantro.
