Prepare the Filling
In a bowl, mix the shredded pork or chicken with salt and pepper. Set aside.

Assemble the Flautas
Warm the corn tortillas in a pan or microwave until pliable. Place about 1/4 cup of the meat filling in the center of each tortilla, roll tightly, and secure with a toothpick if necessary.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until hot.

Fry the Flautas
Carefully place the rolled tortillas in the hot oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve
Serve the flautas hot, topped with shredded lettuce, a dollop of sour cream, and diced tomatoes.
