    Cook the Chorizo

    In a skillet over medium heat, add the olive oil. Once hot, add the pork chorizo and cook, breaking it apart with a spatula, until fully cooked and browned (about 5-7 minutes).

    Melt the Cheese

    Once the chorizo is cooked, reduce the heat to low. Sprinkle the shredded cheese evenly over the chorizo in the skillet. Cover the skillet with a lid and let it sit for about 2-3 minutes, or until the cheese has melted.

    Prepare the Tortillas

    While the cheese is melting, warm the flour tortillas in a separate skillet or microwave until soft and pliable.

    Serve

    Once the cheese has melted, remove the skillet from heat. Serve the choriqueso hot, topped with fresh cilantro, and accompanied by the warm flour tortillas. Optionally, add sour cream and salsa on the side.
