1. Prepare the Chicken
Preheat your wood-fired oven to 400°F (200°C). Rub the whole chicken with olive oil, salt, and black pepper. Mix the rosemary and honey together, then brush this mixture all over the chicken.
2. Roast the Chicken
Place the chicken on a roasting rack in the oven and roast for about 1 hour, or until the internal temperature reaches 165°F (75°C). Baste the chicken with the pan juices halfway through cooking.
3. Prepare the Brussels Sprouts
While the chicken is roasting, trim and halve the Brussels sprouts. Toss them in olive oil, salt, and pepper, and place them in a baking dish. Roast them in the oven for the last 20 minutes of the chicken's cooking time.
4. Make the Roasted Garlic Jus
Wrap the garlic cloves in foil and place them in the oven during the last 30 minutes of the chicken's roasting time. Once roasted, squeeze the garlic out of the skins and mix it with some of the chicken's pan juices to create the jus.
5. Prepare the Crispy Parsnip
Peel and slice the parsnips into thin strips. Heat olive oil in a pan over medium heat and fry the parsnip strips until golden brown and crispy. Drain on paper towels and season with salt.
6. Serve
Once the chicken is done, let it rest for 10 minutes before carving. Serve the chicken with the roasted Brussels sprouts, drizzled with the roasted garlic jus, and top with the crispy parsnips.
