Preparation

Prepare the Ginger

Peel and finely grate the fresh ginger root. Set aside.

Make the Sugar Syrup

In a saucepan, combine the grated ginger, granulated sugar, and 2 cups of water. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and let it cool to room temperature.

Combine Ingredients

In a large mixing bowl, combine the cooled ginger syrup, remaining 2 cups of water, lemon juice, and yeast. Stir well to combine.

Fermentation

Cover the bowl with a clean cloth and let it sit at room temperature for 24-48 hours, until bubbles form and the mixture starts to ferment.

Bottling

Once fermentation is complete, strain the mixture through a fine mesh sieve into clean bottles, leaving some space at the top. Seal the bottles tightly.

Carbonation

Leave the sealed bottles at room temperature for another 3-5 days to carbonate. Check daily to ensure they are not over-carbonating.

Refrigerate and Serve

Once carbonated, refrigerate the ginger beer. Serve chilled and enjoy!
