Wood Fired Prime Beef Striploin

Cooking Instructions

    Prepare the Beef

    Preheat your wood-fired grill to high heat. Season the prime beef striploin generously with salt and black pepper on all sides. Rub with olive oil.

    Cook the Beef

    Place the beef on the grill and sear for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from grill and let rest for 10 minutes.

    Creamed Lacinato Kale

    In a large skillet over medium heat, melt 1 tablespoon of butter. Add minced garlic and sauté until fragrant. Add chopped lacinato kale and cook until wilted. Stir in heavy cream and cook until thickened. Season with salt to taste.

    Roasted Red Pearl Onions

    In another skillet, heat remaining butter over medium heat. Add red pearl onions and sauté until caramelized and tender, about 10-12 minutes.

    Porcini Bordelaise Sauce

    Soak dried porcini mushrooms in hot water for 15 minutes, then chop. In a saucepan, combine beef stock and chopped mushrooms, and simmer for 15-20 minutes. Stir in fresh thyme and season with salt and pepper to taste.

    Serving

    Slice the rested prime beef striploin and serve alongside the creamed lacinato kale and roasted red pearl onions. Drizzle with porcini bordelaise sauce.
