Preparation Steps

  1. 1

    Prepare the Garlic-Parsley Butter

In a bowl, combine melted butter, minced garlic, and chopped parsley. Mix well and set aside.

  2. 2

    Preheat the Grill

Preheat your wood-fired grill or oven to a high temperature, around 450°F (230°C).

  3. 3

    Clean the Oysters

Rinse the Hog Island oysters under cold water to remove any dirt and debris. Scrub the shells with a brush if needed.

  4. 4

    Prepare the Filling

In a mixing bowl, combine Dungeness crab meat, capers, and crumbled feta. Mix gently to avoid breaking apart the crab meat.

  5. 5

    Assemble the Oysters

Place the cleaned oysters on a heatproof tray. Spoon the crab mixture evenly onto each oyster, then drizzle with garlic-parsley butter.

  6. 6

    Top with Breadcrumbs

Sprinkle breadcrumbs generously over the topped oysters.

  7. 7

    Cook the Oysters

Place the tray of oysters on the grill or in the oven. Cook for about 8-10 minutes, or until the breadcrumbs are golden brown and the oysters are bubbling.

  8. 8

    Serve

Remove the oysters from the grill. Let them cool for a minute and serve warm, garnished with additional parsley if desired.
