Method

Preparing the Steak

    Marinate the Steak

    In a bowl, mix together rosemary, thyme, garlic, olive oil, salt, and black pepper. Coat the wagyu bavette steak with the marinade and let it sit for at least 1 hour or overnight in the refrigerator.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Cook the marinated steak for about 4-5 minutes per side for medium-rare, or until your desired doneness. Let it rest for 5 minutes before slicing.

Making the Horseradish-Dijon Cream

    Prepare the Cream

    In a small bowl, mix together sour cream, horseradish, and Dijon mustard until well combined. Refrigerate until serving.

Making the Red Wine Demi-Glace

    Prepare the Demi-Glace

    In a saucepan, sauté shallots in butter until translucent. Add red wine and bring to a boil. Reduce heat and let it simmer until reduced by half. Add beef stock and simmer until thickened. Strain if desired.

Caramelizing the Onions

    Cook the Onions

    In a skillet, heat olive oil over medium heat. Add sliced onions and cook slowly, stirring occasionally, until they are golden brown and caramelized, about 20-25 minutes.

Making the Pommes Frites

    Prepare the Fries

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the cut potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt to taste.
