    Prepare the Peaches

    Preheat your oven to 350°F (175°C). Peel, pit, and slice the peaches. In a large bowl, mix the sliced peaches with 2 tablespoons of sugar. Let them sit for about 10 minutes to release their juices.

    Make the Cobbler Batter

    In another bowl, whisk together the flour, baking powder, salt, and remaining tablespoon of sugar. Stir in the milk and melted butter until smooth. Add the vanilla extract and cinnamon.

    Combine and Bake

    Pour the batter into a greased 9x13 inch baking dish. Spoon the peaches and their juices on top of the batter. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

    Let the cobbler cool slightly before serving. Serve warm, topped with a generous scoop of homemade ice cream.
