Method

Steak Tartare Preparation

    Mix Ingredients

    In a bowl, combine the finely chopped beef tenderloin, egg yolks, Dijon mustard, Worcestershire sauce, chopped capers, salt, and black pepper. Mix well until combined.

    Chill

    Cover the mixture and refrigerate for about 30 minutes to allow the flavors to meld together.

Herb Salad Preparation

    Prepare Salad

    In a bowl, toss the mixed herbs with olive oil, lemon juice, and salt to taste. Set aside.

Fried Capers Preparation

    Fry Capers

    In a small pan, heat olive oil over medium heat. Add the drained capers and fry for about 2-3 minutes until crispy. Drain on paper towels.

Garlic-Parsley Popovers Preparation

    Prepare Batter

    Preheat the oven to 220°C (425°F). In a bowl, whisk together the flour, milk, eggs, melted butter, minced garlic, chopped parsley, and salt until smooth.

    Bake Popovers

    Grease a popover or muffin tin and fill each cup halfway with the batter. Bake for 20-25 minutes until puffed and golden brown.

Assembly

    Plate the steak tartare and top with the herb salad and fried capers. Serve hot with garlic-parsley popovers on the side.
