    Marinate the Fish

    In a mixing bowl, combine the diced rockfish and lime juice. Cover and let it marinate in the refrigerator for about 15 to 20 minutes until the fish is opaque and 'cooked' by the lime juice.

    Prepare the Agua Chile

    In a blender, combine the diced cucumber, tequila, jalapeño, and a pinch of salt. Blend until smooth. Adjust seasoning as needed.

    Combine Ingredients

    Once the fish is marinated, add the cucumber mixture, red onion, cilantro, salt, and black pepper to the fish. Gently mix to combine.

    Spoon the ceviche into serving bowls, top with toasted corn, and garnish with lime wedges. Enjoy!
