    Prepare the Duck Breast

    Score the skin of the duck breast in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

    Cook the Duck Breast

    Place the duck breasts skin-side down in a cold, dry skillet. Turn the heat to medium and cook for about 6-8 minutes, or until the skin is golden brown and crispy. Flip the duck breasts and cook for an additional 4-6 minutes for medium-rare, or until desired doneness. Remove from the skillet and let rest for 5 minutes.

    Prepare the Plate

    While the duck is resting, warm the apple butter in a small saucepan over low heat. Chop the candied walnuts coarsely.

    Serve

    Slice the duck breast thinly and arrange on a plate. Drizzle with warm apple butter, sprinkle with candied walnuts, and top with fresh sorrel leaves.
