Prime Rib and Accompaniments
Method
Preparation Steps
- 1
Prepare the Prime Rib
Preheat your oven to 350°F (175°C). Season the prime rib with salt and pepper. Place it in a roasting pan and cook in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Let it rest for 20 minutes before slicing.
- 2
Make the Natural Jus
In a saucepan, combine the beef broth and drippings from the cooked prime rib. Bring to a boil and simmer for about 20 minutes until slightly reduced.
- 3
Prepare the Horseradish Aioli
In a bowl, mix together the mayonnaise and fresh horseradish. Adjust seasoning with salt and pepper to taste.
- 4
Fry the Crispy Onions
In a bowl, mix flour, salt, and pepper. Dip the thinly sliced onions into the buttermilk, then coat in the flour mixture. Heat oil in a deep skillet over medium heat. Fry the onions until golden brown and crispy. Remove and drain on paper towels.
- 5
Assemble the French Dip
Slice the buttered French rolls and pile in the sliced prime rib. Top with crispy onions and a generous dollop of horseradish aioli. Serve with small bowls of natural jus for dipping.
