Prepare the Fingerling Potatoes
Preheat the oven to 425°F (220°C). Wash the fingerling potatoes and slice them in half lengthwise. Toss them with 2 tablespoons of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for about 25-30 minutes, or until golden and tender.

Sauté the Spinach
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Bloomsdale spinach and sauté until wilted, about 3-4 minutes. Season with a little salt and pepper. Remove from heat and set aside.

Cook the Salmon
In the same skillet, add another tablespoon of olive oil and heat over medium-high heat. Season the salmon fillets with salt and pepper. Place the fillets skin-side down in the skillet and cook for about 4-5 minutes. Carefully flip the fillets and cook for an additional 3-4 minutes or until the salmon is cooked to your liking.

Prepare the Dill Crème Fraîche
In a small bowl, mix the crème fraîche with the chopped fresh dill and the juice of the Meyer lemon. Adjust seasoning with salt and pepper to taste.
