Duck Breast

Prepare the Duck
Score the skin of the duck breasts in a criss-cross pattern, being careful not to cut into the meat. Season generously with salt and black pepper.

Rest the Duck
Remove the duck breasts from the pan and let them rest for 5 minutes before slicing.

Roast the Plantains
Grill or roast the plantains until they are charred and soft. Remove from heat and let cool before peeling.

Blend the Mole
Blend the mixture until smooth, adjusting seasoning as needed. Keep warm until serving.
Roasted Pineapple Jam

Prepare the Pineapple
In a saucepan, combine diced pineapple, brown sugar, lime juice, and cinnamon. Cook over medium heat until the pineapple breaks down and the mixture thickens, about 20 minutes.

Let the jam cool before transferring to a jar for storage. It can be stored in the refrigerator for up to a week.
