Granita and Garnish

Method

Preparation and Assembly

  1. 1

    Make the Tequila Granita

In a mixing bowl, combine the tequila, fresh lime juice, and simple syrup. Mix well until the syrup is dissolved.

  2. 2

    Freeze the Granita

Pour the mixture into a shallow dish and place it in the freezer. After 30 minutes, use a fork to scrape the mixture to create ice flakes. Repeat every 30 minutes until the granita is fluffy and frozen, usually about 2-3 hours.

  3. 3

    Prepare the Oysters

Shuck the oysters and place them on a bed of crushed ice on a serving platter.

  4. 4

    Serve

Spoon a small amount of the tequila granita over each oyster and sprinkle with black lime powder. Serve immediately.
