1. Prepare the Aioli
In a bowl, combine the mayonnaise, Old Bay seasoning, lemon juice, and a pinch of salt and pepper. Mix well until smooth.
2. Mix the Lobster Filling
In a separate bowl, gently combine the fresh lobster meat, chopped celery, and prepared Old Bay aioli. Stir gently to coat the lobster without breaking it apart.
3. Prepare the Rolls
Heat a skillet over medium heat. Spread softened butter on the outside of each French roll. Place the rolls in the skillet and toast until golden brown on both sides, about 2-3 minutes per side.
4. Assemble the Lobster Rolls
Once the rolls are toasted, remove them from the skillet. Fill each roll generously with the lobster mixture. Serve immediately and enjoy!
