    Prepare the Rock Cod

    In a bowl, mix flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Dredge rock cod fillets in the mixture until well coated.

    Fry the Fish

    In a deep frying pan, heat oil over medium-high heat. Fry the coated rock cod for about 4-5 minutes on each side until golden and crispy. Drain on paper towels.

    Prepare the Tomatillo Salsa Verde

    Blend tomatillos, cilantro, lime juice, garlic, jalapeño, and salt in a food processor until smooth. Set aside.

    Make the Chipotle Crema

    In a small bowl, mix sour cream, chipotle peppers in adobo sauce, lime juice, and salt to taste until smooth.

    Prepare Frijoles Negros

    Heat canned frijoles negros in a saucepan until warmed through. Season with cumin, salt, and pepper to taste.

    Assemble Tacos

    Warm corn tortillas in a skillet. Place a piece of crispy rock cod on each tortilla. Top with tomatillo salsa verde, a drizzle of chipotle crema, and a spoonful of frijoles negros. Garnish with mixed greens dressed in cilantro dressing.
