Prepare the Macaroni
Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Lobster Sauce
In a large saucepan, melt the butter over medium heat. Add the chopped shallots and sauté until translucent. Pour in the white wine and let it reduce by half. Sprinkle in the flour and whisk to combine, cooking for 1-2 minutes.

Make the Cheese Sauce
Gradually add the milk while continuing to whisk, ensuring there are no lumps. Bring the mixture to a simmer and add the Morbiér, Raclette, cheddar, and Parmesan cheese. Stir until the cheeses have melted and the sauce is smooth. Add the truffle oil, salt, and black pepper to taste.

Combine Lobster and Pasta
Fold in the cooked macaroni and lobster meat into the cheese sauce until well combined.

Prepare for Baking
Preheat your oven to 350°F (175°C). Transfer the lobster mac and cheese mixture into a greased baking dish. Top with breadcrumbs and additional Parmesan cheese if desired.

Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.
