    Cook the Pasta

    In a large pot of salted boiling water, cook the cavatelli pasta according to package instructions until al dente. Drain and set aside.

    Poach the Lobster

    In a saucepan, melt 2 tablespoons of butter over medium heat. Add lobster tails and poach for about 6-8 minutes until cooked through. Remove the lobster, let cool, then chop into bite-sized pieces.

    Make the Cheese Sauce

    In a large saucepan, melt the remaining 2 tablespoons of butter over medium heat. Stir in heavy cream and bring to a simmer. Gradually add in cheddar, Gruyere, Monterey Jack, Parmesan, and cream cheese, stirring until melted and smooth. Season with salt and black pepper to taste.

    Combine Ingredients

    In a large mixing bowl, combine the cooked cavatelli, lobster pieces, and cheese sauce. Mix until well incorporated.

    Prepare Breadcrumb Topping

    In a separate bowl, mix breadcrumbs with olive oil and a pinch of salt. Stir until the breadcrumbs are evenly coated.

    Bake

    Preheat your oven to 350°F (175°C). Transfer the lobster mac and cheese mixture to a greased baking dish. Sprinkle the breadcrumb mixture evenly over the top. Bake for 25-30 minutes, until bubbly and golden brown.
