    Prepare the Crepe Batter

    In a mixing bowl, whisk together the flour and salt. In another bowl, beat the eggs and then add the milk and melted butter. Gradually mix the wet ingredients into the dry ingredients until smooth. Let the batter rest for 30 minutes.

    Cook the Crepes

    Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter into the skillet, tilting to spread evenly. Cook for 1-2 minutes until edges start to lift, then flip and cook for another minute. Remove and set aside. Repeat with remaining batter.

    Prepare the Filling

    In a skillet, melt butter over medium heat. Add the sliced leeks and sauté until soft. Stir in the lobster meat and cook for 2-3 minutes. Add heavy cream, salt, pepper, and dill. Cook until heated through.

    Assemble the Crepes

    Take a crepe and place a generous amount of the lobster and leek filling in the center. Fold the crepe over the filling and place in a warm oven to keep warm. Repeat with remaining crepes and filling.

    Serve

    Serve the crepes warm, garnished with additional dill if desired.
