Directions for Preparing Grilled Maine Lobster Tail

    Prepare the Lobster

    Preheat the grill to medium-high heat. Using kitchen shears, cut the top of each lobster tail shell down the center, being careful not to cut through the meat. Gently pull the meat out of the shell and lay it on top.

    Season the Lobster

    Brush the lobster meat with olive oil and season with salt and black pepper.

    Grill the Lobster

    Place the lobster tails on the grill, meat side down. Grill for about 5-6 minutes, then flip and grill for another 4-5 minutes until the meat is opaque and cooked through.

    Make the Peach Puree

    In a blender, combine the peaches and honey. Blend until smooth and set aside.

    Prepare the Piperade

    In a skillet, heat a tablespoon of olive oil over medium heat. Sauté the onion and garlic until translucent. Add the red and green bell peppers and cook until soft, about 5-7 minutes. Season with salt and pepper to taste.

    Serve

    Plate the grilled lobster tails, topped with piperade, a drizzle of peach puree, and garnish with chopped cilantro and a squeeze of lime juice.
