    Prepare the Celery Root Puree

    In a pot, combine the diced celery root and heavy cream. Bring to a simmer and cook until the celery root is tender, about 15 minutes. Drain and blend until smooth. Season with salt and set aside.

    Cure the Leek Butter

    In a small saucepan, melt the butter over low heat. Add the sliced leeks and cook until soft and fragrant, about 5 minutes. Remove from heat and let it cool slightly. Strain the leeks from the butter, reserving both the butter and the leeks for later use.

    Grill the Trout

    Preheat the grill to medium-high heat. Rub the cleaned trout with olive oil, salt, and black pepper. Place the trout on the grill and cook for about 5-7 minutes on each side or until the fish flakes easily with a fork.

    Plating

    On a plate, spread a generous amount of celery root puree. Place the grilled trout on top and drizzle with the reserved leek butter. Garnish with smoked trout roe and sprinkle with chopped chives.
