Cooking Instructions

  1. 1

    Prepare the Beef Tenderloin

Preheat your grill to high heat. Season the Brandt beef tenderloin generously with salt and cracked black pepper.

  2. 2

    Grill the Beef

Place the tenderloin on the hot grill and sear each side for about 4-5 minutes for medium-rare, or until desired doneness. Remove from the grill and let it rest for 10 minutes before slicing.

  3. 3

    Caramelize the Cipollini Onions

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the cipollini onions and cook until caramelized, about 10-12 minutes. Season with salt to taste.

  4. 4

    Roast the Wild Mushrooms

In another skillet, heat the remaining olive oil over medium-high heat. Add the wild mushrooms and sauté until they are browned and tender, about 5-7 minutes. Season with salt and pepper.

  5. 5

    Make the Au Poivre Sauce

In a saucepan, crush the black peppercorns and add them to the heavy cream. Simmer on low heat until slightly thickened, about 5 minutes. Adjust seasoning with salt.

  6. 6

    Serve

Slice the rested tenderloin and plate it with caramelized cipollini, roasted wild mushrooms, and a dollop of truffle butter on top. Drizzle with au poivre sauce and garnish with fresh parsley.
