    Prepare the Fennel Slaw

    In a large bowl, combine the sliced fennel, shredded carrot, cilantro, lime juice, and a pinch of salt. Toss well and set aside to marinate for at least 15 minutes.

    Prepare the Jalapeño Vinaigrette

    In a small bowl, whisk together the finely chopped jalapeño, apple cider vinegar, olive oil, and a pinch of salt. Set aside.

    Prepare the Breading Mixture

    In a shallow dish, mix together the all-purpose flour, cornmeal, baking powder, salt, and black pepper. In another bowl, whisk together the egg and milk.

    Fry the Oysters

    Heat the vegetable oil in a deep skillet over medium-high heat. Dip each oyster into the egg mixture, then coat in the breading mixture. Fry in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Assemble the Tacos

    Warm the corn tortillas in a dry skillet. Place 3 fried oysters on each tortilla, top with fennel slaw, drizzle with jalapeño vinaigrette, and add a spoonful of pimento cheese.
