Prepare the Fries
Preheat your oven to 425°F (220°C). Slice the potatoes into thin fries. Toss them with olive oil, salt, and chopped parsley. Spread them on a baking sheet and bake for 30-35 minutes until crispy, flipping halfway through.

Cook the Steak
Season the flat iron steak generously with salt and crushed black peppercorns. Heat a skillet over high heat and add a tablespoon of olive oil. Once hot, add the steak and sear for about 4-5 minutes per side for medium-rare. Let it rest for 5 minutes before slicing.

Make the Au Poivre Sauce
In the same skillet, reduce heat to medium and add butter and minced garlic. Cook until fragrant, then add heavy cream and the remaining crushed black peppercorns. Simmer until slightly thickened, about 5 minutes.

Plate the Dish
On a serving plate, arrange the fries, top with sliced steak, and drizzle with Au Poivre sauce. Garnish with fresh watercress.
