Prepare the Chicken
Preheat your oven to 425°F (220°C). Pat the chicken halves dry with paper towels. In a small bowl, mix together minced garlic, olive oil, salt, and black pepper. Rub this mixture generously over the chicken, making sure to get it under the skin for maximum flavor.

Roast the Chicken
Place the chicken halves on a roasting pan, skin side up. Roast in the preheated oven for about 45-50 minutes or until the skin is crispy and the internal temperature reaches 165°F (75°C).

Fry the Herbs
While the chicken is roasting, heat a small amount of olive oil in a frying pan over medium heat. Add the chopped herbs and fry until crispy, about 2-3 minutes. Remove and drain on paper towels.

Prepare the Hot Sauce
In a small saucepan, heat your hot sauce over low heat. Add the juice of 2 lemons and stir to combine. Adjust seasoning if necessary.
