Tartine Preparation
Prepare the Puff Pastry
Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets on a lightly floured surface to fit your desired tartine size. Place them on a baking sheet lined with parchment paper.
Caramelize the Fruits
In a skillet over medium heat, melt the butter. Add the brown sugar, cinnamon, and a pinch of salt. Stir until the mixture is bubbly. Add the sliced apples and pears, cooking until they are soft and caramelized, about 8-10 minutes.
Assemble the Tartine
Spread a generous layer of Hudson Valley duck liver mousse over the puff pastry sheets. Top with the caramelized apple and pear mixture, spreading evenly.
Bake the Tartine
Bake in the preheated oven for 15-20 minutes, or until the puff pastry is golden brown and crispy.
Serve
Remove from the oven and let cool slightly before slicing into portions. Serve warm.
