    Prepare the Potatoes

    Boil the potatoes in salted water until fork-tender. Drain and let cool slightly. Peel the potatoes and mash them until smooth.

    Make the Gnocchi Dough

    In a large mixing bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a soft dough forms. Avoid overworking the dough.

    Shape the Gnocchi

    On a floured surface, divide the dough into smaller pieces. Roll each piece into a long rope (about 1/2 inch thick) and cut into 1-inch pieces. Use a fork to gently press down on each piece to create ridges.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the top, about 2-3 minutes. Remove with a slotted spoon and set aside.

    Prepare the Sauce

    In a large skillet, melt the truffle butter over medium heat. Add the cooked gnocchi and toss to coat. Cook for an additional 2-3 minutes until they are heated through.

    Plate the gnocchi, top with fresh ricotta, and garnish with shaved Burgundy truffle. Serve immediately.
