Method

Marinade Preparation

    Prepare the Marinade

    In a mixing bowl, combine ancho chili powder, olive oil, lime juice, minced garlic, cumin, salt, pepper, and chopped cilantro. Mix well until all ingredients are combined.

    Marinate Lobster

    Place the lobster tails in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, or up to 4 hours for more flavor.

Cooking Lobster

    Grill the Lobster

    Preheat the grill to medium-high heat. Remove lobster tails from the marinade and place them on the grill, flesh side down. Grill for about 5-7 minutes per side, or until the lobster is cooked through and has nice grill marks.

Pupusa Preparation

    Make the Pupusa Dough

    In a large bowl, combine masa harina and water. Mix until a smooth dough forms. Let it rest for 10 minutes.

    Fill the Pupusas

    Divide the dough into equal portions. Flatten each portion and place a tablespoon of shredded Queso Oaxaca and some chopped spring onions in the center. Fold the dough over to enclose the filling and reshape into a disc.

    Cook the Pupusas

    Heat a skillet over medium heat and cook the pupusas for about 3-4 minutes on each side or until golden brown and cooked through.

Frijoles Negros Preparation

    Prepare Frijoles Negros

    In a saucepan, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until translucent. Stir in the cooked black beans, cumin, and salt. Heat through for about 5-7 minutes.

Asparagus Curtido Preparation

    Make the Curtido

    In a bowl, combine asparagus, red onion, shredded carrot, vinegar, and salt. Toss well and let it sit for at least 15 minutes before serving.

Mojo Verde Preparation

    Prepare Mojo Verde

    In a blender, combine cilantro, garlic, lime juice, olive oil, and salt. Blend until smooth. Adjust seasoning to taste.
