Lemon Ice Preparation

Make the Lemon Ice

In a saucepan, combine the fresh lemon juice, water, and sugar. Heat over medium heat until the sugar is fully dissolved. Remove from heat and stir in the lemon zest. Let it cool, then pour the mixture into a shallow dish and freeze for at least 4 hours, scraping with a fork every hour to create a fluffy texture.

Pickle the Shallots

Thinly slice the shallots and place them in a jar. In a separate bowl, mix the white vinegar, sugar, and salt until dissolved. Pour the mixture over the shallots and let them sit at room temperature for at least 30 minutes, or refrigerate for a few hours for a more intense flavor.

Assembling the Dish

Serve the Oysters

Shuck the fresh oysters and place them on a serving platter. Top each oyster with a spoonful of lemon ice and a few pickled shallots. Serve immediately and enjoy!
