Make the Soup
In a large pot, combine chicken broth, diced carrots, celery, and chopped onion. Bring to a boil, then reduce heat and simmer for 20 minutes. Add egg noodles, thyme, salt, and pepper. Cook until noodles are tender.
Main Course
Cook the Chicken
Season chicken breasts with garlic powder, paprika, salt, and pepper. In a skillet, melt butter and cook chicken until golden brown and cooked through, about 6-7 minutes per side. Garnish with fresh parsley.
Dessert
Prepare the Chocolate Mousse
In a saucepan, heat heavy cream until just simmering. Remove from heat and add chopped dark chocolate and vanilla extract. Stir until smooth. Chill in the refrigerator for 1 hour. Serve with fresh berries.
