Marinating the Pork

Soften the Chiles

In a saucepan, combine the dried chiles with enough water to cover. Bring to a boil and simmer for about 10 minutes until softened.

Prepare the Marinade

Remove chiles from water, and place them in a blender with garlic, pineapple juice, vinegar, cumin, oregano, salt, black pepper, and brown sugar. Blend until smooth.

Marinate the Pork

Cut the pork shoulder into large chunks and place in a large bowl. Pour the marinade over the pork, ensuring all pieces are well-coated.

Refrigerate

Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight for best flavor.

Preheat your grill or oven to medium-high heat.

Remove the pork from the marinade and shake off excess. Grill or roast the pork for about 25-30 minutes, turning occasionally, until fully cooked and slightly charred.

Once cooked, let the pork rest for 10 minutes before slicing it thinly against the grain.
