Preparation
1. Prep the Pineapple
Cut the pineapple in half lengthwise and scoop out the flesh, leaving about half an inch of the flesh intact for structure. Set aside the scooped pineapple for later use.
2. Season the Chicken and Shrimp
In a large bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and black pepper. Add the chicken breast and shrimp to the bowl and toss to coat thoroughly.

3. Grill the Chicken and Shrimp
Preheat the grill to medium-high heat. Grill the chicken for about 5-7 minutes per side until fully cooked and the internal temperature reaches 165°F (75°C). Grill the shrimp for about 2-3 minutes per side until they turn pink and opaque.
4. Melt the Cheese
Once the chicken and shrimp are cooked, slice the chicken into strips. Place the chicken and shrimp inside the hollowed pineapple halves. Top with shredded cheese and close the grill lid. Grill for an additional 2-3 minutes or until the cheese has melted.
Serving
5. Garnish and Serve
Remove the pineapple fajitas from the grill. Garnish with chopped cilantro, lime wedges, and a dollop of sour cream. Serve immediately while hot.
