Preparing the Corn

Roast the Corn

Preheat your grill to medium-high heat. Place the corn on the grill and roast for about 10-15 minutes, turning occasionally until the corn is tender and slightly charred. Remove from the grill and let it cool for a few minutes.

Making Lime Mayonnaise

Mix Mayonnaise and Lime Juice

In a bowl, combine the mayonnaise and lime juice. Mix well until smooth and evenly blended. Set aside.

Assembling the Elote

Coat the Corn

Using a brush or a spoon, generously coat each ear of roasted corn with the lime mayonnaise mixture, making sure to cover all sides.

Add Toppings

Sprinkle the crushed Takis over the mayonnaise-coated corn, followed by a generous dusting of Tajín seasoning.

Serve the elote warm with lime wedges on the side for squeezing over the top before eating.
