Method

Preparation Steps

  1. 1

    Prepare the Pork Cutlets

Start by pounding the pork cutlets until they are about 1/2 inch thick. Season both sides with salt and black pepper.

  2. 2

    Breading the Cutlets

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each cutlet in flour, dip in egg, and finally coat with breadcrumbs.

  3. 3

    Fry the Cutlets

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Fry the breaded cutlets for about 4-5 minutes on each side until golden brown. Remove and keep warm.

  4. 4

    Make the Sauce

In the same skillet, add the remaining 2 tablespoons of olive oil. Sauté the diced onion until translucent, then add the mushrooms, bell peppers, and corn. Cook until the vegetables are tender.

  5. 5

    Add Tomatoes

Stir in the diced tomatoes and simmer for about 5 minutes, allowing the flavors to combine. Adjust seasoning with salt and pepper to taste.

  6. 6

    Prepare Fried Potatoes

While the sauce is simmering, peel and cut the potatoes into wedges. In another skillet, heat oil and fry the potato wedges until crispy and golden brown.

  7. 7

    Serve

Plate the pork cutlets, generously spoon the sauce over the top, and serve with fried potatoes and a sprinkle of fresh parsley.
