    Prepare the Weisswurst

    In a large pot, bring water to a boil. Gently add the Weisswurst sausages and reduce to a simmer. Cook for about 20-25 minutes, ensuring they do not burst.

    Make the Potato Salad

    While the sausages are cooking, peel and dice the potatoes. Boil in salted water until tender, about 15 minutes. Drain and allow to cool slightly.

    Cook the Bacon and Onion

    In a skillet, cook the bacon (if using) until crispy. Remove and chop. In the same skillet, sauté the diced onion until translucent.

    Combine the Salad

    In a bowl, combine the potatoes, sautéed onion, chopped bacon, apple cider vinegar, sugar, salt, and pepper. Toss gently to combine.

    Place the cooked Weisswurst on a plate with the pretzel, a dollop of sweet mustard, and serve the potato salad on the side. Garnish with parsley if desired.
