    In a bowl, combine mayonnaise, minced garlic, lemon juice, orange juice, lemon zest, orange zest, salt, and black pepper. Mix well until fully combined. Refrigerate for at least 30 minutes to let the flavors meld.

    Prepare the Calamari

    In a bowl, whisk together flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk the eggs and buttermilk together. Dip each calamari ring into the egg mixture, then dredge in the flour mixture, ensuring an even coating.

    Fry the Calamari

    In a deep skillet, heat vegetable oil over medium-high heat until hot. Fry the calamari rings in batches until golden brown and crispy, about 2-3 minutes per batch. Remove and drain on paper towels.

    Serve the crispy calamari rings hot with the chilled citrus aioli on the side for dipping.
