1. Prepare the Marinade

In a bowl, mix minced garlic, caraway seeds, paprika, salt, and black pepper. Rub this mixture all over the pork loin and let it marinate for at least 4 hours, preferably overnight.

2. Prepare the Onions

Slice the onions and sauté them in olive oil over medium heat until they are soft and caramelized. Set aside.

3. Stuff the Pork Loin

Make a deep cut along the length of the pork loin, creating a pocket. Stuff the caramelized onions into the pocket of the pork loin.

4. Grill the Pork Loin

Preheat the grill. Place the stuffed pork loin on the spit and grill over medium heat for about 1.5 to 2 hours, or until the internal temperature reaches 70°C (160°F).

5. Prepare the Red Cabbage

Finely shred the red cabbage and sauté it in a pan with olive oil. Add vinegar and cook until tender, about 15 minutes.

6. Serve

Slice the pork loin and serve it alongside the red cabbage and house spätzle.
