    If using store-bought German potato pancakes, heat them according to package instructions. If making from scratch, grate potatoes, squeeze out excess moisture, mix with salt and pepper, and fry until golden brown on both sides.

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then slide them into the simmering water. Poach for about 3-4 minutes for a runny yolk. Remove with a slotted spoon and drain on paper towels.
