    Prepare the Steak

    Season the rib eye steak with salt and black pepper on both sides. Let it sit at room temperature for about 30 minutes.

    Cook the Steak

    In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the rib eye steak and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove the steak from the skillet and let it rest.

    Sauté the Vegetables

    In the same skillet, add the remaining olive oil and butter. Sauté the chopped onion until translucent, then add the sliced mushrooms and cook until browned.

    Prepare the Sauce

    Pour the burgundy red wine into the skillet with the sautéed onions and mushrooms. Bring to a simmer, scraping the bottom of the skillet to deglaze, and let reduce for about 5 minutes.

    Serve

    Slice the rested steak and plate it with the sautéed vegetables on top. Drizzle the burgundy sauce over the steak and serve with fried potatoes and fresh vegetables on the side.
