    Prepare the Rouladen

    Lay out the beef slices on a clean surface. Spread a thin layer of mustard over each slice, then layer with bacon, a pickle, and a few slices of onion. Season with salt and pepper.

    Roll and Secure

    Starting from one end, roll the beef tightly around the fillings. Secure each roll with toothpicks or kitchen twine to hold in place.

    Brown the Rouladen

    In a large skillet, heat olive oil over medium-high heat. Add the rouladen and brown on all sides, about 5-7 minutes total. Remove the rouladen and set aside.

    Make the Braising Liquid

    In the same skillet, add the beef broth and scrape up any browned bits from the bottom. Return the rouladen to the skillet, cover, and reduce the heat to low. Simmer for about 1.5 to 2 hours, until the beef is tender.

    Prepare the Gravy

    Once the rouladen is cooked, remove from the skillet and keep warm. Mix flour with a little water to make a slurry. Stir the slurry into the braising liquid and cook until thickened, about 5 minutes.

    Slice the rouladen and serve with the gravy, fried potatoes, and red cabbage.
