Pesto Crusted Salmon

    Prepare the Salmon

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the salmon fillets on the baking sheet and season with salt and black pepper.

    Apply Pesto

    Spread a generous amount of basil pesto over the top of each salmon fillet, making sure to cover them evenly.

    Bake the Salmon

    Drizzle olive oil over the salmon fillets and place them in the preheated oven. Bake for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

    Prepare the Side Dishes

    While the salmon is baking, wilt baby spinach in a skillet over medium heat until just tender. Cook wild rice according to package instructions.

    Serve

    Plate the pesto crusted salmon with wilted spinach and a side of wild rice. Top with sun-dried tomato tapenade before serving.
