Prepare the Spätzle Dough
In a large bowl, mix together the flour, eggs, milk, salt, and nutmeg until a smooth, thick batter forms.

Cook the Spätzle
Bring a large pot of salted water to a boil. Using a Spätzle maker or a colander, press the dough into the boiling water. Cook until the Spätzle float to the top, about 2-3 minutes. Remove with a slotted spoon and set aside.

Sauté Onions
In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until golden brown.

Serve
Transfer the Käsespätzle to a serving dish, and enjoy while hot!
